01. What is Glycemic Index (GI)?

The Glycemic Index (GI) is a scale from 0 to 100 that tells you how fast the carbohydrate in a food turns into blood sugar (glucose) after you eat it.

GI tells how fast, GL tells how much in your actual serving. Even a high-GI food can have a low GL if you eat a small portion.

02. What Makes GI Go Up or Down?

More fibre = slower digestion. Whole wheat, bran, dals have fibre that blunts the spike. Maida removes this fibre → GI jumps.

More cooking & finer grinding = higher GI. Whole fruit < juice. Hand-pounded rice < polished rice. White bread & cornflakes are highly processed → high GI.

A firm, less-ripe banana (moderate GI) becomes high GI when fully ripe and very sweet.
